Chef Amaury Guichon is one of the most emblematic figures of the new generation of pastry chefs and was named The World’s Most Creative Pastry Chef In 2023 for his outstanding innovations in chocolate and pastry arts. He is continually renewing and sharing ideas about his craft and passion with the world. In every dessert he creates, his main focus is to propose pastry creations that combine the very best in taste, ingredients, and visual effects. After seventeen years of devoting his life fully to the pastry industry, he opened The Pastry Academy by Amaury Guichon in 2019 with Chef Michel Ernots. His goal was to share his life experience in the pastry industry with aspiring chefs and enthusiasts who would like to learn the fundamentals and advanced skills of this beautiful craft.

In 2021, Guichon launched his own TV show on Netflix : The School of Chocolate, a top 10 show in over 50 countries. 

Then in 2024, he went on to co-host the newest television series in the Masterchef Franchise, Dessert Masters. Dessert Masters brings together the top pastry chefs in Australia for a series of challenges on all things sweet.

Chef Amaury Guichon is well known for his stunning showpieces constructed purely out of chocolate, giving him the name “The Chocolate Guy”. Throughout the years he has partnered with some amazing brands such as Baileys, Warner Brothers, Burberry, and so many more in order to bring their creative vision to life through the use of pastry and his platform. He was featured on The Tonight Show as the #1 Video on Tiktok for his Chocolate Giraffe creation, holds Guinness World Records, and continues to strive to push the boundaries on what can be possible within his industry.

After seventeen years of devoting his life fully to the pastry industry, Chef Amaury Guichon opened The Pastry Academy by Amaury Guichon in 2019 with Chef Michel Ernots. His goal was to share his life experience in the pastry industry with aspiring chefs and enthusiasts who would like to learn the fundamentals and advanced skills of this beautiful craft. The Pastry Academy offers a 7-week hands-on in person program covering all bases of pastry, plated dessert, chocolate, ice-cream, danish, bread, candy and chocolate showpieces. It is a place where passion, skill, and education converge to empower the next generation of pastry professionals.
